Pochado de las Verduras<\/h3>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul data-path-to-node=\"5\">\n<li>\n<p data-path-to-node=\"5,0,0\">Pela y limpia las verduras: pimientos, cebolleta y tomate. Retira las pepitas y los tallos.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"5,1,0\">Pica todas las verduras.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"5,2,0\">Pon a pochar las verduras picadas en una cazuela de hierro o marmita, a fuego medio, durante unos 10 minutos, hasta que est\u00e9n doradas.<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"6\">2. Base del Guiso<\/h3>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul data-path-to-node=\"7\">\n<li>\n<p data-path-to-node=\"7,0,0\">Mientras las verduras se pochan, pela y <b>trisca<\/b> (rompe) las patatas en trozos irregulares.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"7,1,0\">Cuando la verdura est\u00e9 a punto, agrega las patatas, el vaso de <b>vino blanco<\/b>, la hoja de <b>laurel<\/b> y el diente de <b>ajo<\/b> picado finamente.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"7,2,0\">Remueve un par de veces. Deja que el vino hierva durante <b>2 minutos<\/b> para evaporar el alcohol.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"7,3,0\">Cubre las patatas con <b>agua<\/b>, baja el fuego y deja cocer a fuego lento durante <b>30 minutos<\/b>.<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"8\">3. Incorporaci\u00f3n del Bonito<\/h3>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul data-path-to-node=\"9\">\n<li>\n<p data-path-to-node=\"9,0,0\">Limpia el bonito retirando impurezas, pieles o zonas de sangre seca, y c\u00f3rtalo en trozos del tama\u00f1o de un bocado.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"9,1,0\">Cuando las patatas est\u00e9n casi listas, incorpora el bonito al guiso y a\u00f1ade el <b>piment\u00f3n<\/b>.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"9,2,0\">Deja cocer solo <b>5 minutos<\/b>. Es importante no cocinarlo en exceso para que el bonito se mantenga tierno por dentro y no quede seco.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"9,3,0\">Retira la cazuela del fuego y deja <b>reposar<\/b> el guiso en la propia marmita durante <b>30 minutos<\/b> m\u00e1s para asentar los sabores.<\/p>\n<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3 data-path-to-node=\"10\">4. Es importante que las jud\u00edas sean del a\u00f1o para que sean las mejores.<\/p>\n<p>2.- Al d\u00eda siguiente, ponemos desde agua fr\u00eda las alubias escurridas junto con las verduras y las carnes. Ponemos a fuego fuerte que rompa a hervir.<\/p>\n<p>3.- Cuando veamos que suelta una espuma, debemos retirar esa espuma. Al desespumarlo retiras las impurezas de las carnes.<\/p>\n<p>4.- Ahora es momento de a\u00f1adirle un vaso de agua fr\u00eda y asustarlo. De esta manera vamos a conseguir una piel de la alubia suave y que no se pele.<\/p>\n<p>5.- En caso de hacer en olla express, cocemos durante unos 18 minutos una vez empiece a salir el vapor. Si lo hacemos en olla normal, las tendremos de 2 a 3 horas, hasta que la alubia est\u00e9 lista.<\/p>\n<p>6.- Mientras cuecen las alubias, vamos a limpiar y cocer la berza a parte. He visto una receta tradicional de una se\u00f1ora que dec\u00eda que es importante hacerlo a parte porque suelta una sustancia que cambia el sabor y ella lo hace aparte, pues yo tambi\u00e9n.<\/p>\n<p>7.- Una vez tengamos cocidas las alubias. Sacamos las verduras y las trituramos.<\/p>\n<p>8.- Hacemos un sofrito de ajo y cebolla a fuego muy lento.<\/p>\n<p>9.- Una vez hecho el sofrito a\u00f1adimos una cucharada de piment\u00f3n dulce de la Vera.<\/p>\n<p>10.- Ahora incorporamos a las alubias, las patatas chascadas, la berza cocida, las verduras trituradas y el sofrito.<\/p>\n<p>11.- Dejamos cocinar unos 20 minutos a fuego lento y servimos.<\/p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][\/et_pb_section]","protected":false},"excerpt":{"rendered":"<p>Quesada PasiegaIngredientes 150 g. harina. 250 g. az\u00facar. 100 g. mantequilla. 1 yogurt natural o de lim\u00f3n. 2 huevos L. 500 ml. leche.
